Grim Fandango is a Tepeche-inspired wild ale from Holy Goat Brewing, clocking in at 6.0% ABV. Brewed with water, barley, oats, pineapple, yeast, hops, cinnamon, and sugar, this beer begins with a golden sour base before a secondary fermentation with 400L of pressed pineapple juice, molasses sugar, and whole Ceylon cinnamon. The label artwork depicts a skeletal surgeon—a nod to the beer’s inspiration—over a vibrant, almost hallucinatory background of red and orange, and includes a somewhat morbid “Hail the Goat!” tagline.

This complex ale is defined by the bright acidity derived from spontaneous fermentation, and complemented by intense pineapple and cinnamon flavors. Holy Goat Brewing notes the beer was re-fermented and conditioned using a mix of Brettanomyces and resident microflora present on the skins of pineapples, promising the flavor will continue to evolve with age.
