The News

Proof & Wood has released its first Bottled in Bond expression, Tumblin’ Dice 11 Year Straight Bourbon, which was distilled in the fall of 2014 at MGP (DSP-IN-15023) and aged for a minimum of 11 years. The whiskey is bottled at 100 proof with a mashbill of 99% corn and 1% barley. This release adheres to the strict standards of the Bottled in Bond Act of 1897, marking a significant milestone for the brand.

The Takeaway

  • Bottled in Bond Legacy: Proof & Wood is tapping into the historic Bottled in Bond Act of 1897 by releasing a whiskey that meets all legal requirements, including being distilled in one season, aged for at least 4 years, and bottled at 100 proof. This adds credibility to their brand as they expand their offerings.

  • Extended Aging Strategy: The Tumblin’ Dice 11 Year Bourbon uses a mashbill of 99% corn and 1% barley, which is unusual for a high-corn bourbon but highlights the brand’s focus on quality and aging. This release shows how extended aging can enhance flavor profiles, offering a nuanced take on traditional straight bourbon.

  • Portfolio Expansion: The new Bottled in Bond expression joins existing Tumblin’ Dice products like the 100 proof high-rye and single barrel collections. By adding this line extension, Proof & Wood is deepening its commitment to transparency and quality while appealing to both loyalists and new whiskey drinkers looking for authenticity.

Original Press Release

Bardstown, KY — [March 27, 2026] — Proof & Wood proudly announces the release of its first Bottled in Bond expression: Tumblin’ Dice 11 Year Straight Bourbon Whiskey. This milestone marks a significant moment for the independent whiskey house and serves as a new line extension within its growing and awarded Tumblin’ Dice portfolio.

The new release joins the existing Tumblin’ Dice lineup, which includes the 100 proof high-rye bourbon and a respected single barrel collection of bourbons and ryes ranging from 6–12 years old. With the addition of a Bottled in Bond offering, the brand continues to expand its range while deepening its commitment to transparency and quality.

Distilled in the fall of 2014 at MGP (DSP-IN-15023) and aged for a minimum of 11 years in new charred oak barrels, this release adheres to the strict standards of the Bottled in Bond Act of 1897. Bottled at 100 proof and produced within a single distillation season, it represents both heritage and precision in American whiskey-making.

The mashbill—99% corn and 1% barley—delivers a rich and approachable profile, showcasing the depth that extended aging can bring to a high-corn bourbon. The result is a whiskey that balances sweetness and structure, offering a nuanced take on a classic style.

“This release represents an exciting evolution for us,” said Dave Schmier of Proof & Wood. “Bottled in Bond is one of the clearest signals of authenticity and quality in American whiskey, and we’re proud to bring that designation to Tumblin’ Dice for the first time.”

The bourbon was bottled by Bluegrass Bottling (DSP-KY-20075), yielding roughly 400 cases, ensuring careful handling and consistency from barrel to bottle.

Tumblin’ Dice 11 Year Straight Bourbon Whiskey Bottled in Bond will be available in limited quantities at select retailers and online.
