Currently starring on The Rookie, Winter has been closely involved in the brand from inception. “This has been a passion of mine for years,” he says. “I fell in love with rum nearly two decades ago on my first trip to Puerto Rico with my now-wife. That’s when I began to understand the depth and nuance premium rum can offer. The real star here is our blend. Palm Republic is an invitation—it takes you somewhere new in every glass.”
Winter and Parkes saw an opportunity to create an ultra-premium expression that could elevate perceptions of rum while preserving the category’s warmth and vibrancy. Sourcing distinctive rums from across the Caribbean and Central America, they blended them into one cohesive expression. The result is a sum greater than its parts, where varying terroirs and aging traditions contribute layers of tropical fruit, baking spice, oak, and subtle sweetness for a multidimensional profile. With no added flavors, sugars, or colorings, the liquid remains 100% unadulterated, built for balance and structure, best enjoyed neat or over a single cube. In keeping with this philosophy and new to the rum category, the brand also debuted a low-sugar cocktail portfolio, crafted with minimal, natural ingredients, prioritizing purity and transparency.
Palm Republic Aged (92 proof) blends rums from Panama, Jamaica, and the U.S. Virgin Islands, aged up to eight years in sherry casks. Notes of dark chocolate, caramel, and molasses lead into muscovado sugar, gingerbread, and baking spice for a rich, full-bodied finish. Palm Republic Silver (80 proof) combines rums from Jamaica and the U.S. Virgin Islands, offering aromas of banana, vanilla, and fresh sugar cane layered with nutmeg and clove. Designed by premier branding agency Grandmerci, the bottle expresses the blend’s multi-island provenance and sense of place.
“The liquid really is exceptional,” says Kasia Bannon, CEO of Grandmerci. “We spent significant time interviewing the founders and board members—their passion for the brand was infectious and inspiring. Our goal was to create a design that does justice to the contents while expressing the brand’s sense of place.”
That thinking is reflected in the details. The faceted form draws inspiration from palm fronds, echoed in the custom typography, and palm species native to each source country are illustrated on the label. Subtle wave detailing at the base references the sea connecting the islands, while the deep blue glass evokes the bottle emerging from the ocean—an intentional nod to the Caribbean.
After more than two years refining the blend alongside master blenders and spirits experts, Winter and Parkes set out to build credibility within the category while raising expectations of what premium rum can be.
